Battle Axe IPA is a unique example of the style, focused on smooth hop flavors and aroma, while avoiding the harsh bitterness found so often in today’s IPAs. Rather than competing for the most bitter beer available, we chose to leverage voluminous late hop additions in the boil to produce a highly drinkable IPA with strong hop flavors, fresh citrus hop aroma and a profound drinkability that makes it a great food beer.

par·a·digm \per-ə-dīm\ an outstandingly clear or typical example.

There are only a few moments in life where an opportunity arises that may possibly change the way you view the world.   This is one of those moments.  What you have in your hand is an outstandingly clear or typical example of what an American Brown Ale should be.  Paradigm Brown Ale is a highly hopped brown ale that transcends the characteristics found in many examples of the style.  The wonderful hop aroma will be apparent the second you pop the cap.  Your first sip will present you with frothy foam and the taste of delicious chocolate malt that is more typical of a darker colored beer.  The malt flavors will carry the hop bitterness through the entire sip and it finishes with a smooth texture that  leaves your mouth watering for more.  At this moment your view of the beer world has changed forever.

Gold Medal Winner – 2014 Great International Beer Festival – Robust Porter

Big, malty and dark, Draken Robust porter exudes a roasty aroma from its tan head. You’ll taste a complex and rich chocolate and caramel malt character followed by a touch of warmth and light malt sweetness. Draken has subtle flavors of raisins and dark fruits and a touch of hop bitterness to balance the flavor on the palate. Despite its dark appearance, the beer is medium-bodied with a wonderful mouthfeel that allows the rich flavors to linger on your tongue just long enough to last until the next sip.

A Hoplite Soldier was the most common type of heavily armed foot-soldier in ancient Greece from the 7th to 4th centuries BC, and most ordinary citizens of Greek city-states were expected to suit up and make themselves available for the role when necessary. If the Holplites were craft beer drinkers, they would need a flavorful, light-bodied, lower-alcohol IPA to keep them on their toes in case a battle ensued.

Hoplite has the massive hop aroma and flavor profile of a traditional IPA, with the sessionable characteristics of a lower alcohol beer.

This beer uses new hop varieties Belma and Azacca to create flavors and aromas of strawberry, melon and citrus fruits that will have you ready for battle or that afternoon in the hot summer sun.

Dark and luscious, Vendel Imperial Stout is a big roasty beer with a wonderful aroma of coffee and dark chocolate emanating from its light brown head.  Brewed with flaked oats for a creamy, satisfying mouthfeel, you’ll experience flavors of dark-roasted coffee and rich, bittersweet chocolate.  Vendel’s recipe includes Sumatra coffee roasted locally at the Coffee Factory in Derry and is the perfect beer to warm up with during the harsh New England winters.

An Experimental IPA That Is Never The Same

The heart of craft beer is about experimentation and creativity. Why always brew a beer the same way twice? With all the different varieties of malts, hops and yeast available we wanted to have some fun. Our 6.7 IPA is offered year-round but in small, limited batches. This current batch (02/09/2016) was brewed using Galaxy, Citra and Vic Secret hops which make this beer a wonderful juice bomb. Available on tap at select bars and restaurants as well as in the tasting room for growler fills.

Day Raider is our take on a classic Belgian-style wheat beer. Brewed with oats, pilsner, malted wheat, and our blend of coriander, chamomile, and orange peel. Day Raider pours a golden yellow color with aromas of citrus fruit. The light malt body and soft mouthfeel make this a refreshing brew for conquering the Summer months.

Harimanna, German for warrior maiden, is a refreshing spin on a historic style. It pours slightly hazy and has a pale, golden color with an off-white head that dissipates quickly. Harimanna’s light body allows the refreshingly tart flavor to shine but still allows a slight sweet and bready malt profile to give some balance. The first sip will impale you with a sharp sour flavor but will give way to a creamy mouthfeel filled with complex characteristics of lemon and citrus fruit. The beer finishes slightly dry and leaves a bright, lingering sensation of sour and lemon that will keep you coming back for more.

This beer uses a “damn the cost” approach to recipe design. We use over 6 lbs of hops per BBL with a majority of those hops being used in late whirlpool additions and dry hopping. Following our steadfast commitment to drinkability in our beers, the abundance of hops produces a significant citrusy aroma and creates a unique “hop nectar” flavor that will surely satisfy the Imperial IPA aficionado. This beer also has a very light, dry malt profile that allows the intense hop flavors to explode from the glass.

Vinátta is a bold Russian Imperial Stout that required four separate mashes to produce one six barrel batch of beer.  This beer has a big, chewy mouthful and has flavors of chocolate, prunes, leather and tobacco.  This is a bold beer that pushes the limits of an already extreme beer style.

Vinátta will be brewed once every winter in limited quantities.

Friendship is about strength, longevity and working together. Vinátta, Norse for friendship, is a Russian Imperial Stout brewed by friends, to be enjoyed with friends, today, or years to come. Vinátta is a collaboration with our friend Andy Day, owner of The Drinkery and Cask and Vine.
